Coconut cream, where have you been all my life?
I thought that coconut things where great already, then one day walking around the health food store I stumbled across Earth’s Choice Coconut Cream. This has turned out to be an amazing base for a lot of recipes! From sweet to savoury, this stuff is super versatile! It has a lot milder of a « coconut » flavour than other coconut milks I have tried, and after being refrigerated it turns into a decadent whipped moose!
Here is the first of many recipes I will be posting featuring this awesome stuff!
Mint Chocolate Coconut Moose
- 1 Can Coconut Cream
- 1 tsp Peppermint Extract (or to taste)
- 2 tbsp Natural Maple Syrup or Honey
- Mini Chocolate chips (optional, is great with the ice cream!)
Add all ingredients to a bowl, and whip with a hand mixer until completely combined. Put the mixture into an air tight container, and place in the fridge for at least 1 hour. Serve chilled on fresh fruit, as a topper on pies or crumbles, or as a moose by itself!
This mixture can also be frozen to make ice cream! Place the mixture in a metal mixing bowl, and put it in the freezer with a metal spoon. Churn every 10 minutes until it has the desired consistency, serve immediately. Left overs may get very hard in the freezer so best to store the mixture in the fridge, and freeze servings as needed.
