Actually best fajitas ever, period. Honest, I was not expecting these to be so delicious! Fajitas where an intermittent staple in our meal plans, something to mix things up, but not something we ate very often, they were good, but nothing I would get super excited for.
Since I went Paleo in January we have not had fajitas, since I didn’t have any gluten free tortilla alternatives available to me, and making my own seemed like a huge chore.
Enter Steph Gaudreau’s (@Steph_Gaudreau) recipe for Best-Ever Paleo Tortillas! These things will change your life!.. ok maybe not, but they are wickedly amazing! I have used them before, but never like this.
Seriously try this recipe, you will not regret it! Unless you hate delicious things, in which case we can no longer be friends. 😜 Enjoy!
4-6 servings (plus some left overs!)
- 4 Chicken breast, seasoned with salt, pepper and Mrs. Dash and EVOO (grilled over open flame, this step is technically optional, but kinda not if you want the title to apply! 😉)
- 3 Bell peppers
- 1/2 Large yellow onion
- 1 Clove garlic
- 3 batches Best-Ever Paleo Tortillas
- Ground ginger, salt and Pepper to taste
- Calavo Guacamole
- Neal Brother’s Salsa
While meat is cooking on the grill – this was a team effort for us, so you may want to cook the chicken ahead of time – chop onion into long strands and mince garlic, sautée with 2 tbsp EVOO or EVCO until onions start to become translucent, add peppers, salt, pepper and ground ginger and sautée on medium heat until tender (about 10 minutes). Meanwhile make tortillas as per instructions in the linked video.
Serve with guacamole, salsa and lettuce!
